What You Need

4 fresh raspberries

1 tablespoon simple syrup

60 ml sakura gin

1 tablespoon fresh lemon juice

1 egg white or 2 tablespoons aquafaba

Ice cubes

Cherry blossom, to garnish

Method:

Add the raspberries and simple syrup to a cocktail shaker and muddle until the fruit breaks down.

Add the sakura gin, lemon juice and egg white or aquafaba.

Shake vigorously without ice to emulsify the mixture and create a smooth foam.

Add ice to the shaker and shake again until well chilled.

Strain into a chilled cocktail glass.

Garnish with a cherry blossom and serve immediately.
