First off, who are you and what do you do here?

My name is David Nash and this is the Wine Room. And I think, yeah, what do we do here? We create experiences ultimately. Whether it's for people taking a bottle away for a special experience at home, or coming here for a kind of intimate night, or like today, we've got a big celebration group coming in for a long lunch. And yeah, I haven't really thought about it before, haha, but that's what we do — create experiences at every level.

How did you get into hospitality?

It was pretty natural, I think probably firstly as a passionate consumer. I didn't start out in the world of hospitality, but I loved going out, dining, entertaining, all the rest of it, and I kind of gravitated towards that industry. And, you know, I think all the aspects of great hospitality — storytelling, bringing joy to people, putting on an amazing experience like we were talking about before — you get so much value out of that. And you can see people get so much value out of that too. So it's a super rewarding thing to be doing with your life.

What does a typical day look like for you?

Oh my God, haha. I've always thought I should do one of those “day in the life” things. I've got two little girls, so most days start with dragging them out of bed, getting them ready for school, and then the school run. Then, yeah, it's a pretty early set-up like we've got in here today. Even if we're doing a big event at night, the whole team is in here around 9 or 10 o'clock in the morning setting up. I'll usually try and get down to the gym for an hour or so, then it's straight back into meetings until three or four o'clock. And then, you know, it could be on the floor until midnight — and then just hit repeat again. So it's always all on, and you just adapt to whatever the day is bringing.

Hospitality is all about presentation. How important is style to you in your day-to-day?

Oh, style is everything. For me, but also for the team. We invest a huge amount in making sure the whole team looks great, which represents the place and the experience we're trying to put on. And for me personally, whether I'm here or out and about, you're kind of always on. You might run into great customers out and about, so you always want to look good. That makes you feel good and confident. Presenting yourself is all part of it, so it’s hugely important.
