Chef Ryan Moore
We had the chance to step inside The Wine Room, and chat to the man behind the food. Chef Ryan spoke about his journey, his style, and where Polo Ralph Lauren sits amongst it all.
Tell us a bit about yourself, who are you and what’s your role here at The Wine Room?
Hey, I'm Ryan and I'm the executive chef and co-owner here at the wine room.
How did you get into hospitality?
So I was playing a lot of sport at a very young age. I got injured so kind of found my feet in cooking. Both my mum and my grandma were really good cooks. I just kind of learned a bit off them and then actually got an amazing job at a Michelin star restaurant back in the UK. Which was a one star and then just kind of worked my way up and ended up working at a place called L’Enclume which has got three stars now and then just before I came to New Zealand me and a friend who'd worked together went to his parents farm opened this restaurant together it was 30 covers and then we won a Michelin star within seven months of being open which is pretty cool. Yeah!
What’s the part of your job you love the most?
Probably what I love the most is I guess seeing guest reactions when they're eating the food. Just making people happy with food. That kind of brings us, yeah, brings us very good joy.
What does a typical day like for you?
A typical day, so yeah normally the chefs start around 9.30, 10ish. We make so much stuff here we don't really buy anything in. So it's kind of... Full go, soon as we come in, full noise. Yeah, we could have a lunch function for 20 people in the PDR room, or we could just get them ready for a working lunch menu and then, yeah, in the evening, it's always something different as well. So we have quite an extensive restaurant menu now, which is kind of grown as we got older here in the wine room. Which is great. Yeah.
Hospitality is all about presentation, how important is style to you in your day-to-day?
Yeah, obviously we're on show in the kitchen so all the guests can kind of see us working. So we always need to look pretty on point and working nice and tidy as well. Yeah, we've got some really nice chef jackets that we have and some nice white aprons that just don't stay very clean, very long.
Polo Ralph Lauren is known for being timeless and versatile. How does that idea of versatility connect with the way you work or live?
Ah, so… Yeah, versatility, especially in the kitchen environment. There's a lot of classical dishes, but we always put our, I guess, wine room twist on it so it's not the same as everyone else. So I guess that kind of relates to clothing. You can have the same Oxford shirt, but you stick, you your sweater on over the shoulders or put your baseball cap on. So yeah.
When you're not at the wine room, what's your go-to off-duty look?
Normally, pretty casual. Yeah, pretty casual. Yeah, nice polo. Some jeans and some sneakers is normally the go-to look.
If you could sum up your personal style in three words, what would they be?
I don't want to say basic… haha. Yeah, probably functional, pretty classic, ummm… but stylish.
The Wine Room blends tradition with a modern edge, do you see that same balance in what you wear?
Yeah, sometimes I work out front as well, put on the suit and jacket, and kind of work the room. So obviously a complete different look to being in the kitchen. So that kind of ties in with the versatility and the classical look of Ralph Lauren.
What’s one Polo piece you could see becoming part of your everyday wardrobe?
I really like these Oxford shirts, they're pretty classic. You can always kind of dress up, dress down. Good look.
Do you think what you wear can influence how you feel or perform in your role?
Yeah, for sure. You know, if you look good, you feel good. You know, you also kind of bring the vibe to work as well.
Polo has been worn by everyone from prep icons to street style legends. Which side do you relate to more or are you somewhere in between?
Yeah… I reckon somewhere in between.
