Coffee Cake Recipe

METHOD

Preheat the oven to 175°C and coat a Bundt pan with cooking spray.

In a stand mixer fitted with a paddle attachment, mix the butter and granulated sugar on medium-high speed until they are light and creamy, about 2 minutes.

With the machine on a slightly lower speed, add the baking powder, baking soda, one egg at a time, and the vanilla and beat until blended, about 1 minute.

Add ⅓ of the flour, followed by ⅓ of the sour cream, then repeat two times, making sure each addition is blended in before adding the next. Turn the mixer off and, using a rubber spatula, scrape the bowl and the paddle. Mix on medium speed for another 30 seconds, or until the mixture is smooth.

In a small bowl, stir together the cane sugar and cinnamon. Add ⅓ of the batter to the Bundt pan, distributing it in dollops around the inside of the pan. Spread and smooth the batter even with a spatula and sprinkle 2 tablespoons of the cinnamon-sugar mixture and 2 tablespoons of chocolate chips over the top. Repeat two more times, topping each addition of batter with 2 tablespoons of the cinnamon sugar and 2 tablespoons of chocolate chips.

Place in the oven and bake for 20 minutes, then add the preserves, dolloping it on by the spoonful around the inner ring of the top of the batter so that you make a circle halfway between the outer edge and the center hole of the pan.

Bake for another 40 minutes, or until a tester inserted into the middle comes out clean. Let cool completely on a wire rack before glazing.

Use a spoon to drizzle the chocolate ganache glaze in thin ribbons back and forth across the top of the cake, then sprinkle on the powdered sugar. Slice and serve.
